Modus Coffee owner Sam Robins sees a silver lining in opening a new venue during a global pandemic. ‘We had to ask ourselves if this was something we really wanted to do,’ says Broadsheet. “People have never felt so isolated, so we thought it was a good idea to create a community gathering place in their neighborhood.”

 

A section simply titled “Stuff on Toast” is new to the Modus menu, and it features the aforementioned ricotta paired with guacamole and pomegranate in a luxurious take on avo toast (on house-made sourdough). In addition, roasted mushrooms with whipped gorgonzola and house-made pickled pears, as well as sous vide eggs with dukkah and thick-cut speck bacon, elevate the cafe breakfast staple.

Wade Drummond, a long-time collaborator, runs the kitchen, building on the skills he learned at Leake St Cafeteria. The front of the house is managed by Marsela Ardi, formerly of Gordon St Garage.

Canelés, galettes, and unmissable cardamom and pistachio bun – a grown-up take on the trending cinnamon scroll – are among the golden pastries in a cabinet on the counter. Pair it with a coffee from the team’s East Victoria Park warehouse, which is available in espresso, filter, or cold brew. Robins and Glass buy their green beans directly from Colombian farmer Luis Anibal Calderon, resulting in a long-term relationship in which Calderon is paid 92 percent more than the market rate for their house-blend espresso.

The Modus aesthetic is clean and modern, with polished concrete, simple white tiles, and wooden seating, as Robins and Glass prefer the cafe to be crowded with people rather than with decorative ornaments. Customers with their dogs sit on a long bench outside while waiting for takeout.

Robins sees Modus’ expansion into the growing complex, which also houses Boston Brewing Co., as an opportunity to create its own sense of place. It will allow us to collaborate with other chefs and venues that we consider to be exceptional. Venues from around Perth will be brought to Vic Park.”
